I'm not a fan of Call of Duty... I just don't get why everyone likes the multiplayer mode. You frantically run around on a puny map with two clips of ammo and just mow each other down... no strategy... nothing. And wtf is up with 2 clips of ammo??? I prefer bad company 2.... aside from the horrible glitches its a great game.
The two weapon inventory came from Halo. I don't like it either. It's meant to be realistic but it doesn't work when you can jump 15 feet in the air. Realism is pointless; we play games for escapism.
Sorry to use Half Life 2 as an example again, but you had like 10 weapons in that (crowbar, zero point energy manipulator, pistol, magnum, smg, pulse rifle, RPG, grenade and crossbow and I think there was something else). It didn't feel unrealistic, it felt fun.
But then again, you're playing Master Chief in Halo, genetically enhanced super-soldier kind of deal, ya know? That's why we can jump that high, but yeah. You knew that :)

IMO, it's that chaos that people like. If you're just running in and shooting whoever you can, bullets flying everywhere with no idea what's going on, sadly, that can get your adrenaline pumping. Does for me whenever I play a good round of Nazi Zombies.
