@ OP: Not universally. I would not be surprised if a lot of them run some flavor of *nix but architectures and operating systems for these devices aren't standardized between manufacturers. If you're still interested then start by picking a specific model and\or manufacturer. I'm sure if you do some searching online you'll find one that is popular with people who modify these devices.
